Cranberry gravy recipe

Top it all off with a sensational drizzle of gravy

Ingredients

  • Celery – A few stalks
  • Onion x 2 – Skin on
  • Carrot x 2 – Roughly chopped
  • Stock – Vegetable water from blanching vegetables
  • Cranberry sauce
  • Gravy granules mix
  • Oil

Method

  1. Prepare fresh carrots (cut off both ends, peel & roughly chop)
  2. Prepare fresh onions (cut off both ends, peel off first layer of skin, leave the rest & roughly chop)
  3. Prepare fresh celery (cut off both ends & roughly chop)
  4. Fry off in a saucepan with a splash of vegetable oil. Cook until the veg is nicely browned
  5. Add some boiling water or the water from the mixed veg recipe (blanched veg)
  6. Add gravy granules for extra taste and stir. This will thicken up your gravy. Continue to add more and stir until you get a consistency/thickness you require
  7. Add a splash of wine if desired & stir
  8. Leave to simmer for as long as possible
  9. Sieve the vegetables into another pan
  10. Add a spoon of cranberry & stir
  11. Serve piping hot
