Cranberry gravy recipe

Top it all off with a sensational drizzle of gravy
Prep time: 10 mins
Cooking time: 60 mins
Ingredients
- Celery – A few stalks
- Onion x 2 – Skin on
- Carrot x 2 – Roughly chopped
- Stock – Vegetable water from blanching vegetables
- Cranberry sauce
- Gravy granules mix
- Oil
Method
- Prepare fresh carrots (cut off both ends, peel & roughly chop)
- Prepare fresh onions (cut off both ends, peel off first layer of skin, leave the rest & roughly chop)
- Prepare fresh celery (cut off both ends & roughly chop)
- Fry off in a saucepan with a splash of vegetable oil. Cook until the veg is nicely browned
- Add some boiling water or the water from the mixed veg recipe (blanched veg)
- Add gravy granules for extra taste and stir. This will thicken up your gravy. Continue to add more and stir until you get a consistency/thickness you require
- Add a splash of wine if desired & stir
- Leave to simmer for as long as possible
- Sieve the vegetables into another pan
- Add a spoon of cranberry & stir
- Serve piping hot
