A few ways to use up your potatoes

I can not think of a more versatile vegetable than the potato, so why do we waste so many every year? Some data even suggests we waste 750,000 tonnes of potato in the UK every year!

There's so many simple and cheap ways to use up your potatoes, including the perfect air-fried jacket potato. Prefer sweet potato? You can also use them to make a yummy salad, find out how...

Air-fried Jacket Potato 🥔

Ingredients

  • Potato/Potatoes
  • Oil
  • Filling of your choice

Method

  1. Select the number of potatoes you want to use. Try to make sure they are around the same size so they cook evenly, and wash in water. 
  2. If they are starting to sprout, just cut these off with a knife and do not use any green or visibly spoilt potatoes. 
  3. Using a fork, make several holes in the potato – this will stop the potato from exploding while cooking. 
  4. Put the potatoes on a plate in the microwave and cook on a high heat for around 8 minutes. Turn them over carefully (they are hot) and cook for another 8 minutes. 
  5. Once finished, the potato should feel soft to the touch and look slightly wrinkled.

If you are meal prepping, you can stop here and leave the finishing steps until you are ready – the microwaved potatoes will keep in the fridge for several days. 

  1. Brush or rub with a small amount of oil and bake in an air fryer for 8 minutes on BAKE. 
  2. Your baked jacket potato is ready to enjoy with a filling of your choice.

Sweet addition to a salad 🥗

How about a quinoa, tomato, pepper and sweet potato salad?

When using sweet potatoes, there's no need to microwave before air frying as they cook much quicker.

Here's how to make a great sweet potato salad:

  1. Peel and dice your sweet potatoes.
  2. Add your sweet potatoes, a tablespoon of oil and your preferred seasonings to the air fryer. Air fry for 10 minutes. 
  3. Mix the cooked sweet potato with some quinoa and other ingredients you have leftover in the fridge, such as tomatoes, pepper, red onion and black olives (you can use whatever you like!).
  4. Dress with olive oil and it's ready to enjoy.

Your sweet potato and quinoa salad will keep in a sealed container in the fridge for 5 days, making this recipe perfect for meal prep!
