Recipe: Cheese and onion quiche

A quiche is a savoury pie made with a flaky pastry crust and a creamy egg custard filling that can be flavoured with all your favourite ingredients.

Ingredients:

  • 1 bag short-crust pastry mix
  • 2 onions
  • 3 eggs
  • Splash of milk 
  • 50g mature cheese
  • Broccoli or any preferred veg

Seasoning: salt, pepper, oil and fresh or dried herbs such as parsley and tarrigon.

Method:

  1. Make the short-crust pastry, following the packet instructions. Set aside and place in the fridge to cool.
  2. Preheat the oven at 180°C.
  3. Peel and finely dice the onions. 
  4. Cook the onion in a pan until soft, colourless and translucent. Leave to cool.
  5. Boil your broccoli until cooked and set aside to cool.
  6. Crack the eggs and milk into a jug and beat with a fork or whisk until completely blended.
  7. Rub a small amount of oil onto a flan dish. Dust a small amount of flour over the oil to create a non-stick surface.
  8. Roll out the pastry on a flour-dusted surface to a slightly larger size than your flan dish. Carefully press the pastry onto dish, leaving an overlap around edges.
  9. Blind bake the pastry case in the oven for 10 mins.
  10. Once out of the oven, trim off the excess pastry around the edge of the dish.
  11. Evenly spread over the cooked onion, grated cheese, veg and season with herbs, salt and pepper.
  12. Pour the egg mix over all the ingredients, making sure everything is covered.
  13. Gently place the flan dish in the oven. Cook until the quiche is golden brown and has an even wobble.

Serving suggestion:

  • Self-raising or plain flour can be used for dusting.
  • Any kind of cheese can be used.
  • Do not flip the pastry over while rolling as it will become dry and hard to handle.
