Camembert, apple & cranberry pie

Ingredients

  • Apple x 1 (Peal & Grate) – 1 will make 12
  • Camembert x 1 Wheel
  • Cranberry Sauce
  • Pack of Short Crust Pastry
  • Tablespoons of Dry Stuffing Mix x 2
  • Raw Grated Potato x 1
  • Seasoning (Salt & Pepper)
  • Flour for Dusting

Method

  1. Break up camembert wheel in pieces and put in a bowl
  2. Grate a peeled apple straight into the bowl
  3. Grate a peeled potato straight into the bowl and mix
  4. Add two tablespoons of sage and onion stuffing mix
  5. Roll out short crust pastry, oil & flour a muffin tray.
  6. Using a large and small pastry cutter or glass, cut out some circles for your muffin tin
  7. Add the larger piece to the muffin tray ensuring it slightly overlaps the top
  8. Spoon the cheese mixture into the pastry cases until half full
  9. Add some cranberry sauce to the half-filled pastry
  10. Whisk an egg & once mixed, use to coat the top edge of your pies
  11. Add the smaller pastry to the top and pinch around the edges to form a seal
  12. Pierce a small hole in each of the pies to let the steam escape while baking
  13. Re apply egg to the top of the pie to ensure golden colour after baking
  14. Bake in a preheated oven 180°C 20 minutes until golden brown
  15. Do not try to remove the pies immediately from the trays. Allow them to rest for 5 mins before serving
