Recipe: Frittata

You can make a frittata with eggs and any fillings you like, such as cheese, veggies, meat or fish, and cook it on the stove or in the oven. It’s a tasty and adaptable dish.

Ingredients:

  • 2 potatoes
  • 2 onions
  • 3 eggs
  • 3 peppers
  • 50g cheese
  • Splash of milk

Store cupboard ingredients: oil and garlic.

Seasoning: salt, pepper, spices of your choice e.g. smoked paprika.

Method:

  1. Peel and finely dice the potatoes into 1cm cubes.
  2. Finely grate or chop 2 cloves of garlic. Dice the onions.
  3. Dice the peppers.
  4. Add water to a pot and bring to the boil.
  5. Once boiling add your potatoes and boil for 5 mins or until tender - once boiled, drain and set aside.
  6. Add oil and garlic to a pan, then add onions. Fry until soft and a little browned. Season with salt.
  7. Add pepper and fry until softened, followed by blanched potatoes.
  8. Mix your eggs and milk together, then pour it into the pan to almost cover everything.
  9. Top the pan with the grated cheese.
  10. Don't mix but continue to cook until the egg mixture has set ensuring it doesn't stick to the pan.
  11. Grill until browned - the eggs should take no longer than 10 mins.

Serving suggestions:

  • Eat hot or eat it the next day cold. Lovely with a side salad or on its own.
  • If you fancy a spicy version, cook the potatoes with curry powder and add some chilli.
  • Great to share with friends for breakfast, lunch, or dinner.
  • Add chopped ham or cooked chicken if you want to make it a meat option.
