You'd be surprised at just how much you can do with your Christmas leftovers. With a little creativity, you can transform them into exciting new dishes to be enjoyed over the following days. 

Try out our quick and easy leftover recipes to keep the festive feeling going. 

Boxing Day Bubble and Squeak

A super easy and delicious way to use up any of your favourite holiday leftovers.

Ingredients

  • All of your leftover ingredients (e.g. pigs in blankets, turkey etc.)
  • Potatoes (the same weight as your leftovers)
  • Salt and pepper to taste
  • Cranberry chutney, to serve
  • 100g plain flour, for dusting
  • 2 tbsp leftover cooking oil/duck fat 
  • 1 tbsp butter

Method

  1. Peel and chop your potatoes before boiling in salted water until cooked through. 
  2. Chop up all of your favourite leftovers and mix in a bowl with the potatoes until a thick mixture. 
  3. Using your hands, roll the mixture into balls before moulding into patties and dusting in flour (you can do this without flour to make it gluten-free, it just helps them to go extra crispy). 
  4. Place in an oiled frying pan over medium-high heat and fry until heated through and golden brown.
  5. Serve with a big spoon of cranberry chutney. 

No-Waste Wrap Pizza

That you can even make with a stuffed crust! 

Ingredients

  • 2 wraps
  • Cranberry sauce
  • Mozzarella cheese
  • Any leftovers for toppings
  • Gravy

Method

  1. Lay your wrap on a baking tray covered in parchment/baking paper, then spread on cranberry sauce as a base and sprinkle on some mozzarella cheese. 
  2. Add your second wrap on top and repeat the cranberry sauce and cheese. 
  3. Start adding your leftover toppings, in the video below they use turkey, pigs in blankets and stuffing. 
  4. Drizzle thick gravy on top and bake in the oven at 175ÂșC for 15 minutes. 

The Ultimate Leftover Toastie

Toasted to perfection, this crispy sandwich is the number one thing to look forward to on Boxing Day. 

Ingredients

  • Bread of your choice (we recommend sourdough) 
  • Butter
  • Cranberry sauce
  • Brie
  • Any leftovers 
  • Gravy, for dipping (optional) 

Method

  1. Heavily butter the outside of your bread slices then on the inside of the slices add cranberry sauce and brie. 
  2. Fill your sandwich by layering all of your leftovers in the centre, such as turkey, pigs in blankets, stuffing, roasties etc. 
  3. Add your top slice of bread and add the entire sandwich to a low-heated frying pan. Press down using a plate or tray to get it extra crispy. 
  4. Once one side is golden brown, after around 4 minutes, flip and repeat. 
  5. Serve with a dipping bowl full of gravy and get dunking.
