Recipe: Vegetable and noodle stir fry

A vegetable and noodle stir fry is a quick and easy dish that uses fresh or frozen vegetables, cooked noodles and a savoury sauce to create a satisfying and healthy meal.
Ingredients:
- 250g noodles
- 1 onion
- 1 punnet of mushrooms
- 3 peppers
- 1 carrot
- 1 spring onion
Seasoning: oil, garlic, ginger, soya sauce and spices
Optional: cooked scrambled eggs
Method:
- Give the mushrooms a quick gentle wash – you don’t want the mushrooms absorbing lots of liquid.
- Slice mushrooms and peppers.
- Peel and finely slice the onion.
- Wash and prepare the spring onions.
- Peel and cut the carrots into thin slices
- Once the veg has been prepared, add it all to a pan with oil and cook until they soften slightly.
- Cook the noodles in pre-boiled water as per the packet instructions.
- Slice garlic and ginger and add to the pan with the veg.
- Once the noodles have cooked, drain them and add them to the pan and mix together well.
- Add a few dashes of soya sauce.
- Taste and adjust seasoning before serving.
Meat options: If you want to add meat, add it at the start of the cooking process to allow it to cook thoroughly before adding the vegetables.
Vegetarian options: Cook eggs into a thin omelet, slice, and add to finish the stir fry off for a protein punch
Serving suggestions:
- Want the meal to go further? Add a bag of bean sprouts
- Frozen stir-fry vegetable mix can be used as an alternative to fresh
- Using soya sauce will reduce the need to use salt during cooking
- Coconut or sesame oil can be used for added flavour.
