Hasselback potatoes recipe

Ingredients
- Potatoes – Whole, Fresh, 2.5kg bag, ideally small but not essential
- Seasoning (Salt & Pepper)
- Oil
- Chop Sticks
Method
- Prepare fresh potatoes (Peel or leave skin on and remove any sprouting imperfections)
- Blanch in boiling salted water for about 10 minutes
- Using chopsticks, place them on the top and bottom of your potato. This is to keep them in place when slicing into them.
- Cut into the potato about two thirds of the way. Repeat process for all the potatoes
- Place on baking tray, cover with oil, season & toss together
- Bake in a preheated oven at 180°C for 40 minutes.
- Serve
