Hasselback potatoes recipe

Ingredients

  • Potatoes – Whole, Fresh, 2.5kg bag, ideally small but not essential
  • Seasoning (Salt & Pepper)
  • Oil
  • Chop Sticks

Method

  1. Prepare fresh potatoes (Peel or leave skin on and remove any sprouting imperfections)
  2. Blanch in boiling salted water for about 10 minutes
  3. Using chopsticks, place them on the top and bottom of your potato. This is to keep them in place when slicing into them.
  4. Cut into the potato about two thirds of the way. Repeat process for all the potatoes
  5. Place on baking tray, cover with oil, season & toss together
  6. Bake in a preheated oven at 180°C for 40 minutes.
  7. Serve
