Recipe: Boston beans and sausage

Boston beans and sausage is a hearty and delicious dish that combines tender baked beans, smoky sausages, and a rich tomato sauce. It is easy to make and perfect for a cosy dinner.
Ingredients:
- 1 onion
- 1 tin of chopped or plum tomatoes
- 1 tin of mixed beans
- 8 vegan, vegetarian or meat sausages
- Vegetables: courgettes, carrots
Seasoning: tomato puree, sugar, vinegar, paprika and garlic
Optional: stock cube, handful of parsley
You can add some of your favourite vegetables such as peppers, and aubergines.
Serve with mashed potato, a side of vegetables or in a jacket potato.
Method:
- Make sure your areas are clean and tidy and wash your hands before you start.
- Peel and finely slice the onion. Remember to leave the core on the onion to minimise the affect of your eyes watering.
- Finely chop or grate two cloves of garlic.
- Finely chop the vegetables.
- Add a few tablespoons of vegetable or sunflower oil to a pan.
- Add crushed garlic, then onion. Gently fry until soft.
- Add the chopped vegetables, season with salt and pepper, and then mix well.
- Add the sausages, and season with a sprinkle of paprika. Keep everything moving in the pan until the sausages start to brown.
- Add a couple of tablespoons of tomato puree, which will thicken the sauce and intensify the flavour.
- Add tinned tomatoes and allow to reduce. Plum tomatoes are usually cheaper than pre chopped, and you can always break them down with your cooking utensil.
- Add the tinned beans.
- Add two tablespoons of vinegar. Crumble in a stock cube of your choice (vegetable or chicken) depending on your choice of sausage
- For an extra sticky finish you can add a spoon of sugar, syrup or honey
- Season with parsley and serve.
