This sauce can be quickly made from what you have spare in the fridge. It's super versatile and made up from roasted vegetables and a good quality Passata (pureed and strained uncooked tomatoes with seasonings).
This recipe takes less than 15 minutes to make using an air fryer. Don't have any air fryer? Use a conventional grill to char the vegetables low and slow, it's still much quicker than an oven bake!
Ingredients
- Peppers
- Courgette
- Red onion
- Tomatoes
- Salt
- Pepper
- Garlic
- Olive oil
Method
1. Gather what vegetables you want to use for this dish – I chose peppers, courgette, red onion and tomatoes.
2. Dice with a knife into small pieces, around 2cm, making sure they're all roughly the same size.
3. Layer into the air fryer with a pinch of salt, grind of pepper, some crushed garlic and a drizzle of olive oil. You can also add other herbs you like.
4. Place into your air dryer and select 'Bake' for 15 minutes.
5. Stop after 7 minutes and shake the pan.
6. Pour into a container and add a bottle of good passata.
7. The sauce is now ready to use straight away by adding to cooked hot pasta, or you can place it into individual pots and freeze or keep it in the fridge for future dishes.
Serving suggestion: with cooked and hot pasta, and finished with cheese is my favourite. Remember to boil your water in the kettle before putting it in a pan with salt, a splash of oil and your pasta – it's so much quicker.
Shelf life and storage: batch cook and freeze up to a month, or keep chilled in the fridge for up to 5 days.
Top tip: always use a good quality plastic liner to maximise your air fryer cooking. This recipe makes loads of yummy cooking juices that you don't want to waste, plus it makes cleaning the air fryer so much easier.
