Chicken Kulambu

"When I was in nursery, for Mother's day, they asked everyone to write down the favourite thing about their Mum. Other kids said their smile, playing with them and a whole host of other reasons. I chose my mum's chicken curry.
Chicken curry, at uni, has become a comfort meal that I know I can enjoy no matter what. It's a meal that instantly transports me back to family meals at home on the weekends, watching a movie or sport. And it will still remain one of the many reasons why I love my mum." Ingredients
- 1kg chicken, cut into bite-sized chunks
- 4 onions, finely chopped
- 2 tomatoes, chopped
- 1.5 tbsp ginger & garlic paste
- Fresh coriander
- Curry leaves
- Spices: 1 tsp chilli powder, 1 tsp coriander powder, 0.5 tsp garam masala, 0.5 tsp turmeric
- Dry spices: 1 stick cinnamon, 4 cloves, 1 tsp cumin, 0.5 tsp fennel seeds
Method
- Heat oil in a pressure cooker.
- Fry the onions and dry spices with curry leaves until the onions turn translucent. Add the ginger & garlic paste and remaining spices.
- Add the chopped tomatoes and sauté until a paste.
- Add the chicken chunks and close the cooker.
- Cook for 3 whistles and take off the heat.
- Serve with fresh coriander on top.
