Mexican Quesadilla (vegetarian)

"Quesadillas are the easiest way to turn whatever we have in the fridge into something warm and comforting. They feel like a casual Latin staple: quick, cheesy and perfect for putting in the centre of a table so everyone can grab a slice while we talk or study together." LATAM committee 25/26.

Ingredients
- Corn or flour tortillas
- Shredded cheese (like Oaxaca, Chihuahua, or a mix of mozzarella and cheddar)
- Sliced mushrooms, bell peppers, or zucchini
- Finely chopped onion
- Butter or oil for cooking
- Optional toppings: guacamole, salsa, sour cream, or pickled jalapeños
Method
- Heat a non-stick pan or skillet over medium heat and add a touch of butter or oil.
- Place one tortilla in the pan and sprinkle cheese evenly over half of it.
- Add your chosen vegetables and a bit more cheese on top to help it stick together.
- Fold the tortilla in half to close it and press gently with a spatula.
- Cook until the underside is golden and crispy, then flip to toast the other side.
- Once the cheese is fully melted, remove from the pan and cut into wedges.
- Serve warm with salsa, guacamole, or sour cream.
