Mexican Quesadilla (vegetarian)

"Quesadillas are the easiest way to turn whatever we have in the fridge into something warm and comforting. They feel like a casual Latin staple: quick, cheesy and perfect for putting in the centre of a table so everyone can grab a slice while we talk or study together." LATAM committee 25/26.

Difficulty: Easy

Ingredients

  • Corn or flour tortillas
  • Shredded cheese (like Oaxaca, Chihuahua, or a mix of mozzarella and cheddar)
  • Sliced mushrooms, bell peppers, or zucchini
  • Finely chopped onion
  • Butter or oil for cooking
  • Optional toppings: guacamole, salsa, sour cream, or pickled jalapeños

Method

  1. Heat a non-stick pan or skillet over medium heat and add a touch of butter or oil.
  2. Place one tortilla in the pan and sprinkle cheese evenly over half of it.
  3. Add your chosen vegetables and a bit more cheese on top to help it stick together.
  4. Fold the tortilla in half to close it and press gently with a spatula.
  5. Cook until the underside is golden and crispy, then flip to toast the other side.
  6. Once the cheese is fully melted, remove from the pan and cut into wedges.
  7. Serve warm with salsa, guacamole, or sour cream.
